Can you recommend an affordable graphics card to run three 4K screens?

No gaming, no other heavy graphics stuff

If you are not gonna be playing video games and graphics performance is not paramount, I would guess you would be at least interested on having a proper video decoder, so I would go for an RTX 3050, it should have enough memory, DisplayPort ports and the most current NVDEC (with AV1 support) to run these three displays without hiccups while playing just about any video file you might be interested on.

I am currently running dual 4K monitors on a 6900XT. Not a three monitor system and may be overkill anyway.

Many GPU's have 3x DisplayPort's so you have a lot of choice. The issue is many NVidia cards have just one HDMI port.
