Is there a WIFI chip I should get?

I notice it is a hit and miss. I have one that is Intel AC 8260 that is working but I wanted to get another that is USB. My friend gave me one that is USB but it doesn't work.

Has anyone tried testing AX 200 and 210 or the Qualcomn one. I'm looking for any WIFI 6 or 7.

Nowadays almost everything works on Linux out of the box (incl. Qualcomm, Mediatek etc), sometimes even better than on windows (depending on distro, of course).
Though, in my personal experience AX200 is by far the most stable and never causes major issues(have it in several machines running Ubuntu Desktop and Server). Plus hardware-wise it's the most reliable(never had a dead one, and I bought quite a few of them).
Haven't had a chance to test AX210 yet, but I'm sure it's also fine.
Qualcomm can be a pain in the ass even on Windows. I had weird behavior on client's laptops where Wifi would drop off as soon as you connect any Bluetooth accessory, or have random speed drops/disconnects.

Laptop or desktop ?
 
Its desktop. I been using that AC 8260 on a PCIe card.

Thanks I might try to get a AX200 card. Currently using CachyOS (arch linux distro)
 
You might have to install a driver, aka recompiling your kernel if there's no built in support for the device you want to use.
I had to do this with the Aquantia 10 Gbps card drives back in the day, before the driver was mainlined.
