M.2 NVMe is just either an x2 or x4 PCI-E connection, so there is no reason it shouldn't work. It's just going to limit the eGPU to x2 o x4. I've seen it done with the older mini-PCI-E connectors that old laptops had for their wireless cards, people would take the wireless cards out and put in adapters like this. Those only gave an x1 link though, but still better than nothing.
