Since the era of dinosaurs i've been using POP for my main private email in outlook. All other emails + work emails are added using IMAP.

The POP email in outlook has 100's of folders in the inbox sub category and 1000's of old and new emails in these folders.

I'm now looking to go IMAP for this email too. Is this the best method to achieve this: https://help.one.com/hc/en-us/articles/360006987398-Change-your-email-setup-from-POP-to-IMAP

One of my concerns being, although the above link suggests we can transfer all folders/emails to the new IMAP account... I just want to make sure its a seamless process? I've already backup everything if anything goes wrong.
 
Looks good, you have everything backed up anyways incase of "Outlook things™".
It's 2022 and that program is still absolute trash.

Outlook trash? I love it! Probably the only piece of software i've ever used which has always been 100% reliable other than the odd occasional request for signing in some emails again. Then again i regard myself as a basic user, just multiple emails in one place, to-do tasks, multiple calendars and contacts. My favourite feature... i always get a ton of attachments in email and its super useful to simply select all and drag into any folder on the PC. My worst feature: wouldn't mind a more seamless sync approach to android with all the above included
 
Yeah, the instructions are correct.

And mostly kidding, I've just been on the administration side of Exchange servers and businesses that use Outlook exclusively, and it's not the most fun you can do. Apples to apples.
Agree with the android outlook statement though, not very intuitive.
