What is the best Pick and play Space Sim

We have Star Wars Squadrons coming, games like Elite and even Eve are huge sandbox or MMO in Space games. Even the upcoming Squadron 42 may end up being more sandbox than some of the old classics. There have been some really good releases and there is more selection in the Space than before. So if you don't want to spend hours jumping through jump gates to start a mission (X) or if you don't want to feel overwhelmed (Elite or Eve) are there any games in the genre that are capable of giving us that Last Starfighter, Han solo feel without having to give up a weekend? Here are a few that I have played that are at least honorable mention.

2. Everspace
3. Darkstar 1
4. Star Conflict

I would really love a remastering of Starlancer or even if it were possible let's re do Freespace 2 with the Blue Heaven mods made for today's technology.
 
Sadly space sim = RPG or MMO set in space for whatever reason. Can't answer that question but I am looking for a good space combat sim or shooter. Think Star Wars Squadron might be it.
 
Sadly the last space sim I got into was wing commander. Unfortunately the series seemed to die after the release of the multi academy award winning movie based on the series.

Strike Suit Infinity (up to 13 hours) and SOL: Exodus (up to 11 hours) were great. Both are designed for controllers, single player, and linear story-driven. You're in a large fighter in both games, and both games have tactics for taking down capital ships.
 
I enjoyed my previous hundreds of hours in Elite, but I have to highly recommend Void Destroyer 2 if you really enjoy space combat. It starts out as a space sim, expands to add RTS and 4X elements, but is a space combat sim at its core.

I still go play Elite, check out Star Citizen's alpha releases here and there, etc... but when they stop fulfilling what I want from a space sim, VD2 gets it done. It isn't the prettiest game, but its damn good IMHO. I've racked up over 200 hours in it. One thing I love is how quick things happen, where Elite needs a good hour or more to get things accomplished, I can feel I did the same with 15 minutes in Void Destroyer 2. No MP, which is fine by me, and the story isn't great but its something to go along with unless you just wanna do sandbox mode. But again, this game is more about having fun, its akin to an X3 lite with MUUUUUUUUCH better combat. :)

I can remember that in the GW-BASIC time there was a space game where you needed to build businesses and transports between planets. Is there nowadays a space sim for that?

Guess Interstellar Transport Company comes close.

100% ED as he does say sim, how ever i cannot be sure going by the other games he's listed if "SIM is what he means as ED has a massive learning curve and requires a controller at the very least and tons of time.

I be playing it still today if i could get a HOTAS that would not break all the time.
