they already do, if you game at 1680x1050 or above. add in AA and 1024MB cards are needed.

Like Mussels said, for high resolutions.

And some games like GTA IV require video memory to load textures. The View Distance option takes almost 600MB of your VRAM.

its clear you dont get how it works.

games do not say 'i need 256MB' or 'i need 512MB' - it is NOT a set amount.

the amount needed is entirely based on the settings you use.

at the absolute lowest settings and 1280x1024 it may need 256MB, at the highest at 1600P it may need 1500MB.
 
There is also the performance of the cards. Those 1GB versions of low end cards is really useless as they cannot perform on that level anyway.

which in your case those cads you ARE referring to like say the 5570, 5670 (Low Gaming *Maybe), Etc. are for Media/Graphic Editing purposes

that may be, but for gaming that extra memory means nothing.
