Will Windows '03 run games likes CS:S, BF2, ect.? I might be switching to it for running webserver and such at my house.

Yes it will, very few games actually have issue with Windows 2003

First of all, run standard. Second, you don't need Windows 2003 to run a webserver, you can run a webserver on anything.
