I got my 32GB single stick Micron on summer 2020 for 790yuan [125$]
Now 32gb Hynix 4800MHz ddr5 is 3299yuan [520$] (quadrupled)

You run DDR5 in a single channel?
 
DDR5 sticks are dual channel, so 2 sticks is quad channel
Internally the DIMMs may be dual channel, but what does CPU-Z say about your memory confiruration?
I doubt it's going to say a Z690/12700 is running 4 channels, even if you have 2 DIMMs, since according to Intel:
12700 / 12900 only supports 2 channels
Z690 only supports 2 DIMMs per channel

Dual-channel DIMMs: Similar to its mobile counterpart, DDR5 will feature two 32-bit memory channels per DIMM (versus a single 64-bit on DDR4). This means we’ll start seeing quad-channel configurations with two DIMMs. The two channels per DIMM are independent and can issue commands separately. Since the burst length and prefetch are twice as much as DDR4, this will improve the overall bandwidth by increasing the overall number of data transfers per DIMMs.

So then with DDR5, I can just run a single stick and the performance will be fine, or better than DDR4 in dual channel (2 sticks mode)?

Not sure. i reckon performance "should" be better with a single DDR5 stick than a single DDR4 stick, not sure about 2 DDR4 sticks

The channels are smaller (2x32bit ddr5 vs 1x64bit ddr4), so it's still probably best to have two sticks.

Ok, now 16gb DDR5 4800Mhz is at 1050 yuan, that's about 40% cheaper than last low.

I was obviously wrong about how CPU-Z reported it, but I did explain DDR5 is 2 channels internally, and Intel considers 2x32-bit = 1 64-bit channel.

"Intel 12th Gen, while still a 128-bit memory interface as previous generations, it uses 4x 32-bit channels, not 2x 64-bit. Undoubtedly companies (even Intel) still call this dual-channel, as a channel is usually inferred to be a 64-bit interface."

This:

only mentions 2 channels because that's all that's relevant to the user.
