Currently it's possible to make the GPU-Z window wider than the "Graphics Card" tab, but not narrower than that tab's 580px width. Why do I want it narrower? Because I sit with GPU-Z open on the "Sensors" tab on my second monitor when gaming, and my window setup is such that that 580px overlaps things on my second screen... but 360px, i.e. 220px narrower, would not.
Coincidentally, the pretty but not-entirely-necessary graphs on the "Sensors" tab are 220px wide. So if I could shrink the GPU-Z window to 360px wide by hiding those graphs, it would be the perfect width for my setup while still providing the relevant info. But I can't because 580px is the minimum allowed width
Given that the GPU-Z window currently shrinks back down to 580px wide when you switch back to the "Graphics Card" tab, it should also theoretically be possible to make it grow back to 580px from the 360px when it is shrunk. And given the graphs grow when the window is made wider, it should be theoretically also be possible to make them narrower if it's shrunk.
