I currently have 2 builds:

4930k for gaming/work: Photoshop, web development and FPS gaming
i7 2600 for Plex(anywhere from 2-12 streams running mostly direct stream) - I need more CPU

I've almost decided on the Threadripper 2950x, is there anything else I should consider?

Ryzen 3### if you can wait until at least July. Should get more cores for your buck (like 16c/32t for $500ish).

Why would anyone want 16 cores for Photoshop or gaming? :-o
You're going to do both things at the same time?

Get the highest clocked 6/8 core CPU you can find. It will be faster.

Plex transcoding will use 32 threads if there's enough streams demanding it.

Even if you just go for 8c/16t, Ryzen 3### should be cheaper/lower power/faster because 7nm and 8-core chiplet.

So if his Plex scenario can use 32 threads, maybe he should keep a Plex-only machine like he does now (and use TR or future Ryzen)?

He said the biggest problem is Plex. 2950X is $900 - one can build a whole SFF PC for this kind of money.

But if Photoshop or gaming is important and he feels that 4930k is not fast enough, then 2950X won't be as well.
4930X is just a bit slower than Ryzen 2600X.
If he expects a boost in Photoshop or games, it's either Ryzen 3 (based on hopes it'll get a 20-30% single-thread boost) or Intel 8/9th gen now.

Money isn't really much of a concern. I spent about 5k building my current rig about 5 years ago(I think). I don't mind spending money when it is something that will serve it's purpose for a long time and I know it will be reliable.

Plex needs some love since I have the bandwidth to do a bunch of streams. The issue is the CPU. I don't think the 4930k will be a big enough boost for plex by itself and I want to game at the same time so I need more cores.

I'll be looking at a new high end GPU as well to take care of the gaming side of things. I'm on a 34" 1080p monitor currently.

I also run folding and WCG from time to time.

I'm thinking about selling both current rigs by parting out and building one really powerful machine for computing and then building a low power NAS box to store 8 drives at first with ability to add 4 more down the line. This will make my main rig look awesome and keep the weight down.

Have they said if 3rd gen chips work on current TR4 motherboards?

Would likely require a BIOS update using a 1st or 2nd gen chip though.

If I were you, I'd keep the 4930k for gaming/work and use the Ryzen system for Plex/WCG/F@H/etc. 4930K should be handling the non-Plex stuff well enough.
