But doesnt this quintessentially kill the purpose of existence of HEDT? I am still trying to comprehend the existence these new chips and motherboards supporting kaby lake X exclusively.

Your guess is as good as anyone else. Intel clearly had a major brain fart in making these CPUs, or thought they somehow could gain some extra sales, whereas the motherboard makers are clearly less than impressed... Hence we end up with a separate SKU of motherboards to reduce problems.
Anandtech managed to fry one of their LGA-2066 chips, as the 7740 and 7640 apparently have a different Voltage for something or the other and if you don't clear the CMOS when you swap to one of the HEDT chips, you can fry them due to this.
