I assume there is a way to address video memory without crashing the card; so I was wondering about the plausibility of GPU-Z figuring out the amount of real RAM in a fake card.

I would assume the opposite

I was wondering about the plausibility of GPU-Z figuring out the amount of real RAM in a fake card.
You could try allocating graphics memory in a loop and see at which point the card crashes
