Anyways, It really depends on what you do with your computer... so I'll ask again... WHAT TYPE OF GAMES DO YOU PLAY? WHAT ELSE DO YOU DO WITH YOUR COMPUTER?!?
Yes the 2560x1XXX monitors look awesome, but for something like racing games or flight simulation, You would much prefer 3x 27" screens. For FPS games, it kind of depends, but I would lean towards 3x 27" screens as well, though others would prefer smaller 23" screens (too much head movement with 27").
Others like 3x 27" in portrait mode, which gives you height AND width, which may be a better balance. You have to keep in mind that it will be a bit tiring on the eyes and neck/head for the 3x as wide eyefinity. Also, eyefinity will have lower framerates since it has significantly more pixels, so you might need to go with the high end 7970s etc from the new generation later on. Also know that you might run into tiny problems with eyefinity. Reason for it is it's complexity vs the simpleness of one large screen.
Eye-infinity is immersive, 2560x1600 is sharp and defined with a better image quality. Some people call single monitor "tunnel vision"
