I found this when someone inquired why wafers were not square in another thread and found a what appears to be the answer why (good stuff IMO).

because the ingots are made by slowly pulling a single big chrystal (vital for IC production; solar cells are multi chrystal -->cheaper to produce) out of molten silicon (most commonly used technique)

then, those are cut into ~1mm thick wafers

you dont get a single christal if you cast the silicon (and it wouldnt be as pure as necessary)
here you can see what happens if you cast silicon (the picture is cast titanium, but you can see the diffrent christals clearly

This is because the Crystal Pulling process will naturally form a cylinder shape monocystalline ingot.

IE: the 1st picture in this post.The ingot is then cut into thin slide which become what you see in the picture you show.
