My specs are
CPU: RYZEN 3950x
Mobo- x570hero
Ram 16x4 Corsair vengeance
Gpu- red devil 6800xt
PSU : 850w Thor

the 6800xt cost me £1200
the 6900xt will cost me £1800
I'm willing to return my 6800xt and pay the extra £600... is it worth it?

No, pay that extra 600 towards somewhere else if you have $$ to burn. Get some fancy peripherals or think outside of the box and spend it towards somewhere else.

600 bucks for 10% is totally pointless.

i paid 1250€ for my 6900XT and i only bought it because a 6800XT was basically the same price.

I think you missed the "if you want to burn money" at the end of the sentence.

Point here is, none of these upgrades are truthfully worth it. 5-10 FPS upgrades are done for the sake of upgrading. Not to mention you're looking at paying big amounts of cash for this...

if you DO have the cash to spend, spend it elsewhere. Simple as that.

That GPU and the 16 core should do it fairly well, I'd look at other things to buy such as a good mic if you're streaming, for example. Really most other things are better picks.
