There's lots of talk about LSTC, but in some basic research, I found LSTB to be closer to what I want out of Windows. Haven't dug too far into that, though, so maybe it's not as cool as it sounds.
Because it's not. The support is limited to security updates and universal app support being removed break compatibility even with time appropriate software. Newer games don't run in LTSB, and it's not compatible with newer PCs either.
The most current LTS images built out of 1809 and 21H2 are still serviceable for the time being, but they will not support newer generations of hardware either.
These are not intended for end users. Use Windows Pro edition and configure it with Winaero Tweaker without removing OS components. That is the way to do it.

You can't. It's not supposed to be used by end users. It's a corporate product.
Addressing the other replies to me: I understand your grievances and even sympathize with some of them, but Microsoft doesn't care. Windows is not designed with people like you in mind, but less knowledgeable users instead.
It's up to you to adapt. My only argument is that staying behind is not a sane option. LTS branches are not a fix. Holding out is pointless and resistance is futile. Be the change you want to see, and ditch Microsoft Windows. Until the analytics show a sharp drop in the amount of users, Microsoft will never back off.
