Putting my first build together what programs to run?

What programs do you normally run to test stability and what not, ive heard of memtest i think, and some program called 3dmark people mention a lot, is that all you run

Orthos and Core Temp. I don't really bother with Memtest myself, maybe because I haven't bothered with tweaking of the memory much or such, but it might be useful anyway. And yeah, 3DMark06 also.

I find it useful to have CPU-z installed also to check things. I forgot what all info it showed but it is probably pretty useful.

3dmark06 or vantage, prime 95, everest memory benchmark are some of the one i use

IntelBurnTest - A tool that helps Intel Core 2-based (and others) test for system stability in a relatively short time (much quicker than Prime95).
