Meh nan i'd rather have proper cable and not tweak stuff and have even more cable management.

first i'll try another motherboard..
Just to be clear I'm just talking about swapping the modular ends of the cables which end in Seasonic layout for the Corsair modular Molex blocks. Nothing jank or non-proper about this, its the same way Cable Mod would make the cables. That said I realize not everyone wants to get that hands on with their cables and I get that.

My PC also turns off randomly with load and while idle with a PNY 3080. This is the second PSU I am that has this occurring. The first PSU was an EVGA Supernova GA 850W unit that upon further research showed to have a lot of problems with ampere. Now I am on an EVGA SuperNova G3 1000W unit and just started experiencing this 4 days ago. I have tried undervolting my 3080, tested memory, tested both CPU and GPU loads to see if they crashed it. It can happen at complete random. Sometimes I launch into windows and it crashes other times I can get 2 hours of usage and then randomly turns off. I have a feeling the OCP keeps getting triggered by the 3080.

Mine turns off and I have to flip the power switch in the back of the PSU and restart it

Done but it wasn't the issue i had before since it was disabled until I had to remove the gpu

I've just swapped my cable mods cables with the seasonic ugly ones i got with my PSU and ran a timespy without any issues

here are the temps and other gpu values.

If the gpu was dying i guess it would have crashed? Could it only be cable / reseating issue?

Are the two cable sets the same gauge?
