What causes MPC to go somewhat "gray" when entering fullscreen, but all good and normal when windowed?

I am running Media Player Classic on a desktop Windows 7.

Any ideas how i can fix this, or?
 
Have you tried a different media player, like VLC, to see if it happens with with them too? It might be a dynamic contrast ratio setting freaking out on your monitor.

hmm... i tried it in vlc, but there it is all good.

must be something in mpc options i need to fix then... any ideas?

Check whether MPC applies some custom gamma curve. If not, apply one yourself and fix the output.

Okay, so now VLC messed up the colors on the screen, so now it looks even worse... and i am not even running VLC! Must be something with my graphics card then, but i have no idea what. I just installed the latest Geforce drivers, but that didn't solve it either... What can then be the problem? Any settings in control panel for Geforce i can change to fix this?

Setting just the gamma curve in control panel should do the trick. On the TV, make sure it's in standard mode (so it won't dynamically apply adjustments on its own) and try to play with the HDMI black level.
MPC I haven't used in a while, I think you need to configure the renderer itself. But I'm not 100% sure.
 
Check refresh rates with video and when the video is windowed.

A doubled or halved refresh rate can create this. In addition, some video color modes from the GPU also use a limited range RGB which can also have this effect. Force full range. If the GPU settings cannot fix this (I've seen similar 'gray blacks' with DSR settings on this 120hz panel, its all about color/display/refresh in my experience) you will need to look at the renderer ffmpeg etc, it is likely some sort of mode gets activated with these players you don't want.

Interestingly enough, it was fixed by changing this setting to 'Desktop Programs' instead of auto-select. Now it no longer "blinks" and changes color settings, which is great!

It was still caused by you setting all of that through control panel. Those settings are better adjusted in the monitor itself.
