DHCP driving me mad

So I added a wireless access point outside in the garage to connect Ethernet cables for CCTV to DHCP seems to be controlled on my main router but for some strange reason the cameras seem to change IP regularly even when I give permanent addresses is it this crazy Xiaomi r3 router I'm using as an access point? I've gone into settings and downloaded the app and it has nothing to change as far as I can see.

You haven't explained how any of it is connected or how its setup, so how is anyone of us supposed to know whats going on?
Complete network topology map please, and double check how DHCP is setup and on which device as well as how and where you set static addresses for the cameras.
If you dont have any handy tools for diagrams just use a online one like: https://app.diagrams.net/ or whatnot, I normally use Dia myself.
And if your routers have any logs, take a look at those and see if they say anything interesting around the periods you found out things had gotten new addresses.

Not enough info, but at a glance looks like you aren’t setting statics or the dhcp range correctly. You have to set statics on the device and either set reservations in the dhcp server (router) or more ideally don’t dhcp the entire LAN subnet. Instead carve out like 10-20 IPs that aren’t part of the scope and assign static devices inside of that .

turns out it was my own stupidity I was manually setting conflicting IP addresses not looking at the Mac id's. I was so focused on it being a issue with the access point I couldn't see past it.

On my network, I have a Mikrotik as the central device on the network, and routers that I've configured as access points. I defined an IPv4 block in mikrotik for each device and then used each of the blocks in a particular router configured as an AP to do dynamic assignment of IPs (DHCP). Still, in addition to the /24 blocks configured on each of the APs, I can also define extra blocks (/30 for example), and make a static assignment on a computer or other device that is behind one of the APs. Works normally.

This access point is dull (unmanaged) it just works as a slave for the main router handing off all the DHCP settings to that. I'm not even using it as an access point really it's just a way for me to use wired cameras without running cat cables from the house to the garage. I originally intended to use it as a second router to keep all the home assistant stuff (cameras and sensors)offline but it turns out I can't use multiple NICs so I'll need to by myself a managed switch at some point. So it's being repurposed for now till I can be bothered to buy a drum of sling cat cable.

I'd say it's that (says it all)
Sorted now but so you know the Xiaomi was terrible as a router, the hardware inside just couldn't handle the traffic I used it for a year as the ISP provided it back when we only used phones in the house but knew it had to be replaced even back then as it would bottleneck the cpu and crash on Ur back then 400/400 connection.

But as a wireless AP it's actually really good, if your a beginner it's so simple to set up. If your a intelligent idiot like myself you can get confused ( case and point) I've never used an enterprise AP so I don't know if it lacks settings there. For hardwiring when running cat cables isn't an option it seems fine and my wife now gets a better signal on her phone in the garden.
One day I will set up mesh but I have other things to spend money on for now namely more ECC ram.
