8gb can be viable for many years to come, especially at 1080p using fsr/dlss,but you must be willing to do *.ini-tweaks in certain games to bring down usage. In Hogwarts I got fps drops to 40-50fps on my 3060ti, and vram usage was around 7500mb, after ini-tweaks it is now 5500mb, image quality looks identical, but fps is rock solid sbove 60fps.
